Porchetta di Ariccia PGI brings the character of Roman tradition to the panino. Its identity is rooted in cooked, seasoned pork, with a flavour profile in which garlic, rosemary and pepper accompany the savouriness of the meat and its characteristic crust. Escarole dressed with black olives, sultanas, capers, pine nuts and garlic* introduces a completely different note, adding a vegetal component capable of bringing character to the more intense side of the Porchetta di Ariccia PGI. Toasted almonds complete the composition with a crunchy texture and a warm, almost biscuit-like aroma. The panino is therefore built around three sensations: succulence, freshness and crunch. An equilibrium that is simple only in appearance, as each ingredient has the task of taking the bite in a different direction.

Silvia’s character comes from the contrast between the softness of Porchetta di Ariccia PGI and the crunch of the almonds. The meat arrives full, aromatic and savoury, while the escarole dressed with black olives, sultanas, capers, pine nuts and garlic* immediately breaks through this intensity. Then the almond enters with a distinct, almost audible crunch. Toasting enhances its aroma and brings a warm note that interacts surprisingly well with the aromas of Porchetta di Ariccia PGI. The result is a panino whose texture changes continuously. Soft at first, fresher and more savoury at the centre, crunchy at the finish. The escarole dressed with black olives, sultanas, capers, pine nuts and garlic* also has a precise role: preventing the meat from completely dominating the palate. Its distinctive dressing prepares the palate for the next bite, while the almond leaves a pleasantly toasted persistence. Silvia is therefore a more vertical, fresher and more contemporary choice.
