OUR MENU IS RENEWED FOR AUTUMN / WINTER 2026

From 1 October, we are renewing our gastronomic offering to welcome a season full of new nuances. The new Autumn/Winter menu celebrates the typical ingredients of the colder months through warm, comforting combinations, designed to bring out the very best in every ingredient. The real novelty this season is the introduction of an entire section dedicated to Porchetta di Ariccia PGI, featured in brand-new recipes such as Marcello, with melted Brie and grilled, sweet-and-sour caramelised onions, and Silvia, with escarole dressed with black olives, sultanas, capers, pine nuts, garlic* and toasted almonds. Alongside them, new creations make their debut with refined combinations: from the Smeraldo panino, pairing bresaola punta d’anca with stracciatella and pistachio cream, to Matteo, where Coppa Piacentina PDO meets porcini mushroom and truffle cream. Much-loved classics also make their return, including Duca, Günther and Bedy. Our exploration of flavour extends well beyond panini, enriching our menu with cold dishes and salads created for the season. In creations such as Andrea, Tirreno, Pagano and Costanza, the savoury character of Cantabrian anchovies, the delicacy of octopus* and the distinctive character of carne salada meet the richness of autumnal notes such as pears, walnuts, goat’s blue cheese and the enveloping aroma of white truffle butter. To complete the experience, our new Realistic Fruit desserts make their debut, in Peanut and Strawberry varieties.
