MORTADELLA WITH PISTACHIOS AND BRIE WITH A MILANESE SOUL
Mortadella with pistachios is the absolute protagonist: soft, fragrant and delicately spiced, with the crunchy, aromatic presence of pistachios breaking through its silky texture. Melted Brie creates a creamy, milky layer that envelops the mortadella with pistachios and makes its flavour even rounder. Pistachio cream continues along the same aromatic profile, but in a more intense and velvety form. This is where Cordusio finds its character: not simply a combination of ingredients, but a composition built around variations on the theme of pistachio. Toasted almonds finally add crunch and a warm note, while pepper introduces depth. An urban, elegant and generous panino, designed to transform a great tradition of Italian charcuterie into a contemporary gesture.


THE DUAL NATURE OF PISTACHIO SURPRISES
Pistachio does not appear just once in Cordusio. It is already present in the mortadella, where it introduces small crunchy, aromatic contrasts, and returns in the cream, transformed into something smooth, intense and almost velvety. This dual presence creates an unusual sensation: the palate immediately recognises pistachio, but encounters it in two completely different textures. Melted Brie adds softness and binds the composition together. Toasted almonds do exactly the opposite: they break through, crunch and introduce a drier, warmer note. Then comes the pepper. A subtle spicy vibration that prevents the creamy component from becoming monotonous and gives the finish greater persistence. Cordusio is therefore a panino built around texture: softness, creaminess, crunch and a hint of spice. The result is opulent yet clearly defined, Milanese in character and contemporary in its interpretation.
