ROAST BEEF, MELTED BRIE AND TOMATO IN BALANCE
Roast beef opens the panino with a tender texture and a distinct meaty presence. It is a preparation that enhances the quality of the cut and a cooking method that preserves its juiciness, concentrating the flavour of the meat without making it heavy. Melted Brie introduces a completely different softness: milky and creamy, with delicate hints of butter and hazelnut. The heat softens its texture and transforms it into an ingredient capable of binding the roast beef with the rest of the composition. Sun-dried tomatoes add concentration. Their sweetness is accompanied by a savoury and slightly tangy note, bringing depth to the meat and cheese. Three ingredients with distinct identities, brought together by De Santis in a compact, contemporary composition.


AIOLI DEFINES THE FINISH WITH CHARACTER
The real change of pace comes from the aioli sauce. Its garlicky, creamy character enters the panino boldly, yet immediately finds its precise place among the other ingredients. With the roast beef, it adds aromatic intensity; with the melted Brie, it creates a more pronounced, almost Mediterranean contrast; with the sun-dried tomatoes, it enhances their savoury, concentrated character. It is a sauce that does more than simply make the bite creamier: it creates a new direction of flavour. The first impression is soft, followed by the meat, then the tomato with its concentrated note. Finally, the aioli leaves a longer, slightly pungent aromatic trail that immediately invites another bite. Clotilde thus finds its character in the tension between delicacy and intensity: the Brie embraces, the roast beef provides structure, the tomato concentrates and the aioli ignites.
